About the coffee:


During harvest, perfectly ripe coffee cherries are hand-picked, sorted, and floated to remove defects. The cherries are then sealed in stainless steel tanks and dosed with carbon dioxide to limit oxygen exposure and slow sugar breakdown, allowing pH to be carefully controlled. This carbonic maceration process enhances fruit-forward flavors and body while preventing over-fermentation.


After extended fermentation, the cherries are dried on raised African beds in a drying house for three weeks until reaching 11% moisture. The coffee is then stored in GrainPro bags for resting, before being hulled and sorted by size, density, and color.


Roaster\'s notes:


A tad bit wine-y, but extremely expressive and forward. If you are okay with a tad bit of (clean) funk, this is an easy Panama coffee.


This will be roasted light on our Aillio Bullet. We finish this one at around 11-12% weight loss -- our style with Panama lots is to have a tad bit more development to contrast its terroir. That\'s what we\'ve found to like.

Brew recipe:


0. 18g grounds1. 60mL bloom (for 40 seconds)2. 60mL second bloom (for 40 seconds) -- use small spoon to stir as brew sits3. 180mL pour (to 300mL) -- apply light swirls if grounds are sticking to brewer sides


You should be at around 3-4 minutes drawdown. If you are hitting it quicker, try going finer.


Rest notes: 3 weeks+.
