ZENU is a specialty coffee directly sourced from Jimma, in southwestern Ethiopia. It is sustainably produced by smallholder farmers who prioritize quality and care. We roast ZENU in Denmark, bringing Ethiopian heritage and craftsmanship together with modern roasting expertise. Through direct trade, we ensure fair prices and social impact for the farming communities behind this exceptional coffee. Every cup supports ethical sourcing and high standards.
ZENU is naturally processed, also called sun-dried. This means the coffee cherries are dried whole, with the fruit still on the bean. This method enhances sweetness and deepens the flavor profile. The coffee has a rich, sweet aroma with prominent chocolate notes. It delivers a smooth, satisfying espresso experience with a rounded, mellow body.
The flavor profile of ZENU is balanced and inviting. Expect light acidity with floral undertones and a distinct nougat aroma. The area’s altitude ranges from 1,500 to 2,000 meters above sea level, which helps slow cherry development. This slow ripening allows the beans to develop dense sugars and complex flavors.
The farmers in Jimma grow indigenous heirloom Arabica varieties that have been cultivated in the region for centuries. These heirloom varieties are unique to Ethiopia and produce distinct flavor profiles. The coffee trees grow under natural shade, preserving the biodiversity of the forests. Farmers carefully pick only the ripest cherries by hand, ensuring top-quality beans.
After harvesting, the cherries undergo natural processing. They are laid out on raised drying beds in the sun, where they dry slowly over several days. This traditional method locks in fruity sweetness and enhances the coffee’s aroma. The drying process is closely monitored to avoid over-fermentation or mold. Once dried, the parchment coffee is hulled and sorted for export.
